Deze Grosses Gewächs ondergaat een langzame, temperatuur gecontroleerde vergisting, waarbij hij langere tijd sur lie rijpt om de complexiteit en het rijpingspotentieel te ontwikkelen. Dit gebeurt in grote eikenhouten “Fuder” vaten, met een inhoud van 1.000 liter. Deze vaten geven de wijn geen eikenhouten smaak zoals je bij moderne barriques zou vinden, maar zorgen in plaats daarvan voor een subtiele micro-oxidatie die de wijn structuur geeft.

HET WIJNHUIS

Les Domaines Auriol is een grootschalige familieonderneming, opgericht in 1995 door Claude Vialade en gevestigd in Lézignan, Corbières. Dit wijnhuis in de Languedoc-regio produceert deels wijnen van eigen wijngaarden in de Corbières en deels van druiven die worden ingekocht bij plaatselijke wijnboeren. De Belles du Sud-lijn is een van de bekende productlijnen van het domein. Les Domaines Auriol staat bekend om zijn authentieke Zuid-Franse wijnen, gemaakt met passie en expertise door lokale wijnboeren.

De naam Belles du Sud, wat ‘schoonheden uit het zuiden’ betekent, is geïnspireerd op een karakteristiek architectonisch element uit de Languedoc: de drie Gratiën, getooid met een amfora of fruitmand, die de fonteinen op de hoofdpleinen van vele stadjes en dorpjes sieren. Alle Belles du Sud-wijnen zijn afkomstig van eigen wijngaarden en zijn cépagewijnen (in sommige gevallen bi-cépage), oftewel wijnen gemaakt van één (of twee) druivensoorten. Deze wijnen vertegenwoordigen de diversiteit en de kwaliteit van de Languedoc-wijnbouw.
